Hope you enjoyed the eclipse. I was underwhelmed, thinking we’d have more darkness here in Rhode Island, but we didn’t. However the lighting was kind of weird. Not gonna lie, I did have some serious FOMO (fear of missing out) though. The only child in me was rearing its’ selfish head. haha I’m off to NY this weekend to meet up with some friends, Sandra of ​Dash of Sanity​, and Rebecca of ​Foodie with Family​, while their children perform in a ballet competition. I’m looking forward to the few days away, spending some time with them and watching the performances. We’ve been getting quite a bit of rain, but the bids are finally on the trees, the daffodils have bloomed and it’s getting a bit warmer which is good because next week my 7:30 am boot camp class moves outside until November! we might just freeze our butts off in the next few weeks, but it’ll probably make us move faster to warm up. Favorite Product of the Week:

I recently bought this defrosting tray from Cuisinart. I can never seem to remember to take stuff out of the freezer the night before I plan to use it, and sometimes don’t submerge it in cold water with enough time to defrost the day of. So, I saw this defrosting tray on Amazon and have to say that I like it so far. It’s compact, easy to clean and the pound of ground beef I put on it was thawed in about 1 ½ hours, in it’s plastic on top of the kitchen counter. For me, it could very well be a game changer in my meal planning…or lack there of. LOL I was asked to partner with a company that has a product that recycles cold water while defrosting something so you never have to worry about changing it, but they charge $400 for it! I told them no because I know you may be on a tight budget. Honestly, if I wouldn’t pay that much for something in my kitchen then I’m certainly not going to promote it and say you should!

Tip of the Week:

How do I reverse the seasoning damage in my dish? Have you added too much salt, sweetness, or spice to your dish and afraid it might be too far gone? Before you give up and toss it, try adding an ingredient to offset it. Too much salt? Add an acid or sweetener. Too much sweetener? Balance it with an acid. If you find there’s too much spice or acid, use a fat or sweetener to offset it.
