The VinePair Podcast: Do Bar Franchises Work?

Adam and Joanna recently took a trip to Las Vegas where they were encouraged to check out Rosina, a new cocktail bar in the Venetian hotel with a menu curated by Sam Ross. But the bar doesn’t share a name with any of Ross’s other bars, nor does Ross himself actually ever work there

Such establishments have existed in the restaurant scene for quite some time, especially in Las Vegas; just look at Gordon Ramsay’s seven Vegas-based establishments. But is slapping a well-known industry figure’s name on a menu and paying them to consult on your bar a worthwhile endeavor? Sure, it might be a way to generate some buzz from the get-go, but it opens the door for quality to slip through the cracks if the advertised startender isn’t there to train staff and oversee operations. Does this business tactic ultimately do a disservice to guests, especially if the bar isn’t designed to mimic other successful spots the bartender already owns?

Fresh off their travels, Adam, Joanna, and Zach take this episode to discuss whether hiring a famous bartender to design your cocktail menu, but not actually tend bar, can actually drive business, especially if that bar doesn’t share a name with the bartender’s more famous establishment(s). Tune in for more.
