Welcome to the weekend, my friends! I’ve been in California for a couple of days, expecting lovely warm weather, and let me tell you, it has been nearly as chilly here as Ohio. Go figure. I’ll be home tomorrow (YAY!) and I’m ready to curl up and stay cozy and warm.
ON OUR MEAL PLAN THIS WEEK: Forget takeout, this creamy, cheesy Chicken Broccoli Pasta is the kind of easy dinner I go to for my busiest weeknights.
I adore soups that are rich without feeling heavy, and this Slow Cooker Ham and Potato Soup delivers. It doesn’t get much better for me than a hearty meal that takes almost no effort.
I don’t know why it took me so long to finally give the wildly popular slow cooker Mississippi pot roast a try, but my boys went wild for it.
Crispy, tender, and juicy Pork Carnitas have been one of my family’s favorite (and most frequent) meals for over ten years now. This is one of those recipes I love because it looks super impressive, but the actual work takes less than 30 minutes. It’s easier than you think.
Spicy, hearty, and cheesy, this hearty skillet of Brussels Sprouts with Sausage and Potatoes makes it easy to get dinner to the table. I have been making this recipe for many years now, and it’s still a staple of our weekly menus.
My boys have been asking for this Chicken Enchilada Dip again. It is a creamy, cheesy, spicy chicken-filled enchilada dip, a hit with everyone who tries it!
Pepperoni pizza dip is one more awesome party appetizer. I mean, who doesn’t love a piping hot, melting cheese dip full of pepperoni?
If you’ve never had a Caramel Stuffed Double Chocolate Chip Cookie, I’m telling you now that they are a cookie that I crave every single time I see these photos. They are legitimately mouthwatering.
My FAVORITE THINGS (once again) this week are this hand cream and this cuticle oil. My hands always feel and look dramatically better after just a few days of regular use.
What I’m WATCHING: Stargate SG-1, remains on repeat. As I mentioned a week or two ago, it’s been a few years, so the show was past due for a rewatch. I just started season 3 and the show just never gets old. SG-1 is a terrific mix of mythology, military action, great humor and fantastic character development.
What I’m LISTENING to: Peace Like A River: The Hymns Project by Chris Rice. I’ve lost count of the number of times I’ve mentioned this album in my newsletter over the years. I love starting my day with this album.
“Peace I leave with you; my peace I give you. I do not give to you as the world gives. Do not let your hearts be troubled and do not be afraid.” John 14:27 NIV
Wishing you a beautiful week filled with little things that make you smile!
Mary
