I started leaning heavily on cabbage when Ben and I first got married; he was still in law school and I was minding our grocery budget, which was tight. And cabbage recipes like these would help that budget go a little bit further.

But it’s not just about budget: when cooked well, cabbage is delicious. It soaks up flavors like a sponge, you can make it meltingly tender or crispy-crunchy depending on how you cook it, and it can be a supporting player or the star of the show.

Cabbage also:

  • Gives You More Bang for Your Buck. Because in addition to being inexpensive, one head of cabbage can often be used for multiple recipes.
  • Lasts for Weeks in the Fridge. So you can stock up when it’s on sale!
  • Has So Many Uses. It can be roasted, sautéed, braised, grilled, or eaten raw in crisp salads.

How to Choose, Store, and Prep Cabbage

  • Choosing Cabbage. Look for heads that feel heavy for their size with tightly packed leaves. Avoid any with brown spots, cracks, or wilted outer leaves.
  • Storing Cabbage. Keep whole heads in the crisper drawer, loosely wrapped. They’ll stay fresh for up to 2 weeks. Once cut, wrap tightly and use within 5 days.
  • Prepping Cabbage. Remove the outer leaves, slice in half through the core, cut out the tough center, and then shred, slice, or chop depending on your recipe.
