
Welcome to the weekend, my friends! Like almost everyone I know, we’re braced for the storm that’s headed across the country, so I’m planning all the hearty soups and casseroles, as well as easy meals can be pulled together when and if we do lose power at some point this week.
ON THE BLOGS THIS WEEK: Did you know that you can make a restaurant-quality clam chowder in less than 30 minutes? It’s easier than you might think! It’s exactly what I’m craving.
Spicy beef and three bean chili comes together quickly on the stovetop or can simmer all day in the slow cooker for a body-warming meal.
Have you tried Mexican lasagna? Spicy beef is layered with rice, beans, and tomatoes, then layered with enchilada sauce to make this hearty Mexican casserole. And my boys devour it!
Can I be completely candid for a moment? I grew up hating split pea soup. It was without a doubt my least favorite soup. But, that all changed with this very recipe. I don’t just like this soup. I really really like THIS split pea soup.
You don’t need a grill to cook the ultimate steak. The perfectly even doneness of a reverse seared New York strip steak makes every single bite a mouthwatering slice of heaven.
Tender jasmine rice with bite sized broccoli florets in a cheesy sauce makes this cheesy broccoli rice picky eater approved. (But it’s also soooo tasty, I’ll eat it as my meal for lunch or for dinner!)
And last but never the least, if anyone in your house is feeling under the weather, this Homemade Cough Remedy is a spicy, honey-cider syrup potent enough to calm a cough and soothe a sore throat. Over the past few years, this handy little remedy has become one of the most popular posts on the website.
My FAVORITE THING this week is my very basic to-do-list style, undated planner. I switched to this style of planner a couple of years ago and it’s been a great fit for me. It’s the cheapest planner I’ve ever used, and go figure, it’s my favorite ever. I just ordered a fresh one. It works perfectly as my checklist for each day with the added benefit of having time slots on the side for the days when I’m more scheduled.
What I’m WATCHING: surprise, surprise (or should I say again, no surprise at all?) Stargate SG-1 is still on repeat. I’m watching Season 6 now, streaming / listening as I work most days. Have you tried my favorite show yet?
What I’m READING / LISTENING to: Atomic Habits by James Clear. I’ve read this book at least 3-4 times now and referred back to it more times than that over the years. I recommend it often – there’s advice here that could benefit anyone and everyone, at any stage of life. I own it on Kindle, in paper, and as an audiobook. It’s an excellent refresher and reminder of where I want my priorities to be.
