The Little Things Newsletter #506 – Life, laughter, and lots of great food!

Welcome to the weekend, my friends! It’s still a winter wonderland outside here in Ohio and I’m happy to be tucked inside warm and cozy today. (Though I did brave -17°F before the sun rose this morning and made it to my yoga class! Yes, I am patting myself on the back for that one.) 

I learned this week that when you don’t drive your car for several days and the temps are below zero, you risk the battery giving up and dying on you. (Yet another thing I never dealt with while living in the desert! Car battery death from the heat? Check. From the cold? This was my first.) 

I’m grateful for multiple family vehicles this weekend and a handy husband replacing my battery now too. We polished off a pot of Italian Vegetable Beef Soup last night (Sean’s forever favorite) and I’m about to start a pot of White Bean, Cabbage, and Sausage Soup to go with our sandwiches for lunch. 

ON THE BLOGS THIS WEEK: Crunchy, chewy, cheesy and loaded with flavorful morsels of tender chicken and green onion, this Teriyaki Chicken Quesadilla was absolutely delicious! 

You know that moment when you’re halfway through winter and your body just starts begging for something fresh, bright, and alive? That’s the reason why this Winter Salad is still on repeat over here. I’ll be making it again this week.

Spinach, tender chunks of chicken, and creamy white beans are combined in a green chile sauce for this easy-to-make Spinach Enchilada Casserole.

I just tucked a fresh batch of Jammy Eggs in the fridge to get us through a few days of breakfast this week. My kids would probably be thrilled to eat them every day if I could just keep them stocked. 

A week of snacking and cleaning out the pantry has resulted in a whole lot of random bits and pieces leftover. So, the odds are good that we’ll be stirring together another batch of Kitchen Sink Cookies this weekend.

Loaded with layers of buttery cinnamon, and topped with a brown sugar streusel, this Cinnamon Coffee Cake is positively irresistible. You’d never know it takes just ten minutes of actual work. 

My FAVORITE THING this week is this ridiculously tiny trashcan. I know, I know. I just claimed a trashcan as my favorite thing, but hear me out. Every time I travel, and I don’t have my tiny trash can in the car, I’m at a loss. It sounds silly, but I LOVE having somewhere to place little scraps of paper, wrappers, and receipts. It’s such a trivial thing, but our cars are trash-free and these tiny trashcans are the reason why. I just love them! 

What I’m WATCHING: I’m watching Schitt’s Creek today and remembering so many moments when Catherine O’Hara made me laugh. #foldinthecheese “Just fold it in, David! I can’t teach you everything.”
