Welcome to the weekend, my friends! Our weather is a roller coaster, but guess what?? We have teeny tiny 1-inch tall daffodil shoots showing up in the yard! And I am soooo here for it. I know it’s early and this isn’t actually spring yet, but it’s a tiny peek and a hint and a glimpse of what’s coming and I’m getting excited for it.
ON THE BLOGS THIS WEEK: With crispy, golden skin and juicy herb-packed meat, these Italian Chicken Thighs require just a few minutes of work in the kitchen.
This Chipotle Pasta is an irresistible study in contrasts. Delicate angel hair pasta is tossed with hearty vegetables in a very light cream sauce with a gentle heat. Best of all, this one takes less than 30 minutes from start to finish!
Five minutes from now you can enjoy a homemade Thousand Island Dressing that’s zesty and tangy, with just the balance of sweetness. It brings a punch of flavor that I just can’t resist, whether I’m drizzling it on a salad or spreading it on a burger.
Crispy baked potatoes are hollowed out and filled with hearty meat and vegetables and topped with creamy mashed potatoes to make these Shepherd’s Pie Baked Potatoes.
No eggs? No problem! This recipe for Eggless Pancakes proves that you can still have the soft, fluffy pancakes you know and love! This is hands-down the best way to satisfy the craving for perfect pancakes, even if you’ve run out of eggs.
I top my pancakes with warm Strawberry Compote every chance I get. Fortunately, it can be made with fresh berries OR with frozen berries, so it’s a favorite we can enjoy year round.
I’ve been snacking on these Air Fryer Brussels Sprouts Chips all week – and YES, I know how nuts that sounds. You all know I’m not that girl, but man, these are just delightfully snackable and surprisingly satisfying!
My FAVORITE THINGS this week are my kitchen timers. I’ve shared them with you before, (we’ve been using them for over 10 years now) but it’s worth mentioning again. I love love love them. They’re magnetic digital timers, so I use them to pin the recipe for whatever I’m cooking/baking to the fridge. That way, if my chicken needs an hour, but the vegetables only need 15 more minutes, and something else is chilling in the fridge for 30 minutes, I know which recipe the timer is notifying me for. (Maybe that’s overkill for some of you, but my hyper-organized heart loves it. And I much prefer this to having a bunch of alarms set on my phone.)
We use these timers all over the house and at less than $2 each, I don’t stress it if one gets broken. My kids have used them for timing school assignments, video game time, even their morning showers used to require a timer. (I’m looking at you, kid-who-shall-not-be named.) These timers have certainly earned their keep in our home.
What I’m READING: The Last Mile by David Baldacci. I read this one as soon as I finished the first in the series. This is book 2 in the Amos Decker series. If you picked up Memory Man last week, then I’m willing to bet you might already have book 2 on your list as well. Let me know what you think!
What I’m WATCHING: Firefly – for the umpteenth time. IYKYN. Monday can’t come soon enough. #bringbackfirefly
What I’m LISTENING to: Colton Dixon has been a strong favorite on my morning playlist this week. His music is fun and hopeful and always uplifting. I really enjoy it.
“Behold, God is my salvation; I will trust, and will not be afraid; for the Lord God is my strength and my song, and he has become my salvation.” Isaiah 12:2 ESV
Wishing you a beautiful week filled with little things that make you smile!
Mary
P.S. Want a peek at what I’m baking this weekend? I’ve been craving these cookies all week!
