Welcome to the weekend, my friends! I hope that your Easter weekend is a beautiful one. The Good Friday service at our church was a blessing last night, and I was glad we were able to be there. Our boys are all home with us this weekend and we’re planning to spend the day together after church, just relaxing and enjoying the time with the family.
ON THE BLOGS THIS WEEK: Do you have your Easter menu figured out? If not, let me help. Because this Balsamic Dijon Glazed Ham is beyond any doubt the best ham I have ever tasted – and the secret is all in the 3 ingredient glaze.
With natural honey sweetness, savory depth, and an irresistible caramelized finish from the oven, these Honey Roasted Carrots are one of the simplest, best tasting side dishes you can make.
Sweet, tart, and refreshing, this Strawberry Spinach Salad is one of my favorite summer side dishes. It’s simple and easy to make, and pairs well with virtually any entree.
Tender strips of chicken are tossed with hot vegetables and fragrant sauce for an easy Ginger Chicken Stir Fry. Full of garlicky, gingery flavor and crisp broccoli florets, I love this homemade dinner even more than expensive takeout. And, I think you will, too!
Say goodbye to the last rainy days of spring with this Mexican Cabbage Soup. Spicy sausage, tender white beans, fresh cabbage, hearty broth, and plenty of spices come together in this very satisfying meal.
Pineapple Angel Food Cake is a soft, fluffy, fun treat that takes nearly no effort to make! And even better, it’s made with just two simple-to-find ingredients that you may already have in your pantry. That’s right; just two ingredients!
Old fashioned Lemon Posset is creamy, velvety 3-ingredient lemon pudding that is impossibly simple and satisfying. It’s impressive as can be and proof that old-school techniques can yield very happy modern results!
What I’m CRAVING: ALLLL the spring vegetables! I picked up some asparagus earlier this week and I’ve roasted it, sauteed it and added it to my everyday salads already. Bring on all the spring flavors, please!
My FAVORITE THING this week is my magnetic cell phone holder for in the car. I’ve been using this phone mount for almost 5 years, and I just bought another one for my son’s car. It’s the easiest phone holder I’ve ever used! (It’s also super affordable and comes in a two-pack.)
What I’m LISTENING to: Psalms by Sandra McCracken. This album has a unique sound, reminiscent of Americana and folk. I love her variations on some of the traditional songs she’s included. My oldest son and I initially discovered her song My Help, My God and within a few minutes I was downloading the full album. It’s beautiful from start to finish and I’ve listened to it regularly for a couple of years now.
“Be still, and know that I am God; I will be exalted among the nations, I will be exalted in the earth.” Psalm 46:10 NIV
Wishing you a beautiful week filled with little things that make you smile!
